The Great British Bake Off (C4, 8pm)

THERE’S an international flavour to the first two challenges, as judges Prue Leith and Paul Hollywood task the bakers with creating a signature savoury take on a French classic and a multi-layer Moroccan technical. But, as so often happens on Bake Off, it could all come down the showstopper, which requires not only a knack for pastry but a basic understanding of structural engineering.

Heathrow Airport: Then & Now (C5, 8pm)

On January 1, 1946, a 13-seater plane took off from the New London Airport, bound for Buenos Aires. It also flew into the history books as the first commercial flight from what would later be renamed Heathrow. Drawing on archive footage as well behind-the-scenes access to the terminals today, this documentary looks at how Heathrow grew to be one of the world’s busiest airports.

The Rise and Fall of Timex Dundee (BBC Scotland, 10pm)

BBC Scotland is turning the spotlight on stories of protests in Scotland which grabbed the headlines – and left lasting effects on the people involved. This opening documentary gets the inside track on what is widely regarded as the last full-blooded strike in the country. It was triggered by Timex bosses’ decision to lay off staff, including several shop stewards, from a factory in Dundee. The workforce was predominantly female and their reminiscences resonate throughout. The story of Timex in Dundee would end in betrayal and anger. Police who stood between the sacked workers and the buses and cars bringing in the “scabs” also reflect on a bitter dispute which left deep divisions.

Defending the Guilty (BBC2, 10pm)

CHAMBERS puts the pupils through their paces in a professionally acted mock trial. Will learns the brutal art of cross-examination from Caroline – only to find it’s a skill he needs in his personal life too. Liam and Danielle spend time with the actors to plan their case, only for Liam to fudge the boundaries between reality and fiction. Comedy following idealistic pupil barrister Will Packham, starring Will Sharpe, Katherine Parkinson, Hugh Coles and Gwyneth Keyworth.
